Don’t let this nondescript looking bars deceive you! They are a visual culinary diamond in the rough! This recipe was adapted from MidWest Living’s Caramel Heavenlies. They truly are a little slice of peanut-treenut-dairy-egg-soy with a gluten-free option, sugar heaven. I baked our allergen savvy adapted version for my son’s annual Food and Treat Stand to benefit the Food Bank of Northern Nevada. We bag up every item individually as to not spread around potential allergens, but it helps with sticky sweetness control too. This recipe was a HUGE hit and I’ve baked it several times since! The secret is that the recipe is quick, easy and uses common pantry items.
The original recipe uses butter, which balances out the amount of marshmallows called for in the original recipe. BUT, when using a non-dairy spread in lieu of butter, more marshmallows are needed, as you’ll see in my version, plus I modified the amount of coconut and nixed the almonds.
This recipe works perfect with gluten-free crackers too, which are a bit thicker and crunchier, which give the bar a solid and more durable base. The key here is to make enough for everyone!
