It has been a journey from 5 star restaurants to canned lima beans and back to amazing food once I realized I was not going to kill off my kids. Here are our absolutely favorite recipes….
Note to my Vegan friends: I do NOT reference purchasing Vegan ingredients, such as marshmallows, sugar, etc. Most of these recipes are VEGAN adaptable and I am assuming you’ll purchase the appropriate ingredients.
Special note: even though many of the recipes may be gluten, soy, corn, fish for shell-fish free, I do not make notation since I’m currently focusing on allergens that I am well familiar with and avoid in my kitchen. In the spirit of NOT making an error, I am not commenting on theses allergens!
FOOD ALLERGY FRIENDLY RECIPES (SOME VEGAN TOO)
Cakes & Muffins
Vegan banana muffins This recipe is the rock star of all banana muffins! It is Super Easy, dairy-egg-peanut-tree nut-sesame seed free. You can make it one bowl by mixing all dry ingredients first and then make a well in the center and add the rest.
Vegan Chocolate Applesauce Cake I made both of these cakes (heart and monster) using this recipe. You can also make a cake from this recipe too. This is my basic go to recipe!
Sponge Cake - I revised this recipe from the Better Homes and Garden cookbook and winged the blueberry topping sauce. This is a great basic recipe that uses egg which lends itself to all sorts of flavors and serving options. You can drizzle chocolate syrup on top or spread jam and fresh fruits. If you can eat dairy this cake screams for whipped cream and fresh fruits.
Cookies
Vegan Pumpkin cookies These Vegan Pumpkin Cookies are the symbolism of fall me to me the cinnamon, pumpkin and raisins just scream eat me with coffee, tea or cocoa!
Frosting and fillings
Vegan Chocolate Ganache –this is the best hands down for simply everything! It is Super Ease, dairy-egg-peanut-tree nut-sesame seed free.
Vegan Chocolate “Buttercream” Frosting…this is a good basic recipe that pipes well.
Desserts
Vegan Chocolate Pudding Pot dessert is a flat out fun show stopper! Super Easy (if you buy the pudding already made), dairy-egg-peanut-tree nut-sesame seed free
Chocolate clusters–these are a recipe made in the microwave and are secret bombs of success! Use high quality chocolate though, dairy-egg-peanut-tree nut-sesame seed free-Vegan
Sweets/Snacks
Soynut Butter Chocolate Glazed Squares The Keating family shared this recipe they created and it is incredibly tasty and easy to make. It needs to stay cool and cut it into small squares and serve in mini-muffin cups! Oh and it’s a no bake recipe.
Sunbutter Popcorn this Sweet Caramel Corn is Super Easy, dairy-egg-peanut-tree nut-sesame seed-gluten free. I don’t form these into balls, we just dive right in and eat these right away.
Caramel Popcorn A good old-fashioned caramel corn recipe that isn’t sticky.
Fondant I use this to create whimsical cupcakes, etc., but the not-so-secret ingredient is marshmallow. You can find Vegan marshmallows at Whole Foods for sure.
Fruit and Granola Bars these are moderately time-consuming, dairy-nut-egg-sesame free granola bars. If they crumble, serve over safe ice cream or soy yogurt
Granola Bars Super Easy, dairy-nut-egg-sesame seed free, if it crumbles, and yes, sometimes it does, just use it over safe coconut ice cream or yogurt.
Soup and Chili
Quinoa soup ; This is our favorite year round soup from the Real Food Daily vegan cookbook. It is peanut-tree nut-dairy-egg-sesame seed free.
Eggplant chili: This is a slam dunk winner all year long. The brown sugar gives it a slightly sweet taste! It is nut-dairy-egg-sesame seed free.
